Ingredients:

  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef or lamb until browned. Drain any excess fat.
  3. Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the tomato paste, Worcestershire sauce, and beef broth. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
  5. Add the peas and corn to the skillet, stirring to combine. Season with salt and pepper to taste.
  6. Transfer the meat and vegetable mixture to a baking dish, spreading it out evenly.
  7. Top with the prepared mashed potatoes, spreading them evenly over the meat mixture. If desired, sprinkle shredded cheddar cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbling.
  9. Garnish with fresh parsley before serving.
